Once I get my Epic 80/500
What would be my best setup?
My equipment
Harman Kardon AVR-645 Play station 3 (DVD-BlueRay player) Digital Cable Box (HDMI) Panasonic TH-42PX60U with 2 HDMI interface
My current setup is cable box to TV using HDMI/HDMI cable, and PS3 to TV using another HDMI/HDMI cable. The receiver is not connected yet, as I'm waiting to make my speaker order.

AngelDash, I'm not really sure what your question is, if you could be more specific with what type of info. you are looking for I'm sure you'll get tons of help.

I read the question as "what are my cabling options and which of those options would you recommend ?". For example, switching most/all of the video in the receiver or wiring the video signals to the TV and audio to the receiver ?
I don't remember offhand if the 645 can switch HDMI or I would provide a first pass answer. Will look it up later and try to post back.

The HK 645 does HDMI switching but only has 2 HDMI inputs. As long as you don't add another HDMI device, I'd assume you hook up the PS3 and cable box to the receiver through HDMI. Then hook up the HDMI output from the receiver to the TV.
