My wife and I both were not into diamonds (inflated prices, the human cost, and that it's a "tradition" created by de beers were reasons) so we went with a sapphire (I can only highly recommend it). DEFINITELY get her buy-in on which ring she wants (cut, setting, metal, stone, etc). She is the one who is going to wear it every day and you'll save a lot of frustration and hurt feelings if you know she'll like it from the outset.
