Thats a nice market. I havn't been there in a while. I used to go regularly when my brother sold orchids at the farmers market across the street.

There is a vendor on the bottom floor that makes awesome eggplant and veal sandwiches (no maple syrup).

Clashes with the hot pepper tomato sauce. I'm sure my son would disagree. Sugar is good on anything to him.

This post reminds me of Baked Brown Sugar Bacon - I suppose you could always replace the brown sugar with maple syrup... I might have to try that!

The recipe below is from the Food Network - pretty darn easy - you can always use more brown sugar than they suggest. I also suggest throwing the bacon and brown sugar in a large ziploc bag to coat the bacon with brown sugar before laying in the pan (I usually skip the parchment paper too).

You can thank me, but your heart will not!

Ingredients
1 pound thick cut bacon
1/4 cup light brown sugar
Directions
Preheat the oven to 375 degrees F.

Line a baking pan with parchment paper and lay the bacon out side by side, overlapping just a bit, if necessary, to fit the whole package on the pan. Sprinkle with the brown sugar and place the pan on the top rack of the oven. Bake 35 to 40 minutes or until the bacon is nicely browned and slightly crispy.* Remove from the oven and serve immediately.

*Ovens tend to cook unevenly so some of the bacon strips will be darker than others. Don't worry; this will satisfy those who like well done bacon.

I cooked a slab of Canadian bacon today. It was to cold for me to grill (which I prefer) but the oven did its job and I think it turned out quite well . Sliced it and made it into sandwiches \:\) .
