I missed this thread the first time around.
I like the Ataris' cover of Don Henley's "Boys of Summer". It is enough like the original to highlight that vibe, but then again it rocks in its own way.

The Hindu Love Gods did some cool covers of "Raspberry Beret" and "Battleship Chains", plus all sort of blues covers. An underappreciated mashup of (R.E.M. - Michael Stipe + Warren Zevon), their CD is quality stuff.

Crazy Mary - Pearl Jam (Victoria Williams)
Cake's version of War Pigs was also kind of interesting, although at first I thought it was terrible.
