Does anyone know how many LAN cables are required for the I/O on an ethernet switch? If I run 2 cat5e to my AV rack from my router that should be enough for 2 switches, or one?

Probably a 4 port unmanaged switch at some point.

That will be enough for 2 switches. In general, you shouldn't run more than one ethernet cable between switches--unless they're managed and you know how to configure them properly.
