Yes, totally off topic, probably not very interesting, but I tried that grilled artichoke recipe again last night, and they came out much nicer. This time I marinated them for 2 days (instead of an hour) and wrapped them in foil before putting them on the grill. I seared them for 5 minutes outside the foil. This last bit was probably unnecessary. They came out very tender and tasty, in some bits very sweet. The mayo sauce was also really good.

I also discovered something you already know--corn on the cob on the BBQ is really, really good... I like doing it in the husk.

I always do our corn on the grill.I like it far better this way compared to just boiling it.There's not much that doesn't taste better on the grill.One thing I don't care for is fish on the grill,I prefer it deep fried.

One great recipe I've tried for grilled corn is as follows.

Remove only the outermost layers of husk so that what remains still completely covers the kernels. Then peel down the remaining layers to expose the corn, drizzle with olive oil and dust with a bit of salt and chipotle powder. Then rewrap with the husk and grill until tender.

Delicious!

Sounds tasty, but I'm going to need to get better olive oil. Any recommendations for a relatively mild one?

What I've been doing is pulling down all of the husk (not removing any), covering with butter, re-wrapping (tie together with a piece of twine) then soak in a pan of water for 30 minutes. Then I grill it, turning every 3-5 minutes, and spraying down with a bit of water to prevent too much burning husk. Seems to work pretty well.

That does sound pretty good,I might just have to try it.Have you guys ever tried mayo and chillie powder on your corn ? That's the way my sister in law likes it.I gave it a try and it's not to bad.I still prefer butter ( real butter ) and some salt though.

I prefer a gallon of butter and a gallon of salt. Per kernel.
