I'm on a roll.... Asking for buying advise lately.. I seem to have collected quite an eclectic collection of knives lately, with a few Shun knives. Different angles on the edge of many. I have a system that uses a bench grinder, it puts an amazing edge on a knife, but it's a down right PITA to use, not real safe, and it's messy. I just can't seem to get motivated to use it anymore... A buddy of mine suggested I get this Edge Pro system. He does not have it, but like me, is thinking about getting it. I think he wants me to buy it, so he can come over and play with it, the scoundrel.... So, I have no first hand experience, nor does anyone else I know. It's not all that cheap, but neither are good wet stones. Does anyone here have any experience with this system, possibly??? They have a pretty good video on their web site, demonstrating how to use it, if you're bored enough to watch it. http://www.edgeproinc.com/Professional-M...-System-p9.html

It looks like it should work fine. However, $500+ seems like an extravagant price for it. Depends how much time you spend sharpening I guess. Perhaps it's worth it if it speeds things up considerably.
With great power comes Awesome irresponsibility.

Check out this sharpener kit at Lee Valley Tools Not quite so hard on the wallet and it looks like it does the same thing.

Not sure how I missed this - we have Shun knives as well and they are a bugger to get an edge on; very hard steel. We use Diamond Hones and I use the Coarse/x-Coarse combo, then finish with a ceramic "steel" and one could shave with them, but I would not recommend it... Scott

Santa brought me the Edge Pro system. Have not had time to fuss with it yet, but it most definitely is "professional" quality.

Thanks for the reminder Michael. I stopped by my mostest favourite manstore today, Lee Valley Tool, to pick up that knife sharpening kit I linked to above.
The concept is dead simple and works really well. I finally brought back the edge of my daily kitchen knife to something resembling sharp. I was surprised at how little effort it took.
If anyone else is interested, the manufacturer is Gatco.
