What it SOUNDS like you've done it taken only the luminance (part of the component signal - sometimes marked as Y) signal out of the receiver and plugged it into the composite in on the TV... or maybe misread the labelling on the back of the receiver or TV and hooked up the luminance to the right place, but messed up the R-Y and B-Y (chroma) patches.

Either way... you're sending only the luminance part of the signal, whether it's a misconnection on one side or the other, or perhaps a bad cable set (but assume operator error first, especially if you're new to HT)... component video takes three 75ohm cables to work, composite takes one.

And for future reference... you can do this INTENTIONALLY to watch something in black and white, I've pulled the chroma patches on a signal we were looking to broadcast in B&W for that retro feel.
