This option in iTunes is there so that you can convert music between formats. You can control what format you want to create in the options menu. Edit->Prefs->General->Import Settings. There are five different encoders(ACC,AIFF,AppleLossless,MP3,WAV) to pick from and settings for each encoder. While using Apple Lossless on already compressed music will not be beneficial as stated in the article; using that format when importing music from directly from a CD is a good idea if you have the storage space on your computer and iPod to hold the larger tracks.
Another good use for this function is to convert music between compressed formats. You can purchase an Unprotected AAC from the iTunes store then convert it into an MP3 for use on devices that cannot play AAC. My car for instance has a builtin hard drive inside the radio but it is limited to Windows Media or MP3 format files.
