I vote for #2 and get another amp. You seem to have a fairly good grasp on what to do, so just go ahead and start pulling some cables. You can mount those plates with drywall anchors for the screws to go into, no need for boxes, as you are only installing the plates for aesthetics to keep the landlord happy about new holes in the wall. Quite simple really.
