Wayne's World 1 & 2 (well, 1 anyway),
How about the Blues Brothers Extended Ed. (long enough to count as 2 movies
Also, not trilogies yet but eventually:
Bourne Identity, Bourne Supremacy, Bourne Ultimatum
&
Pirates of the Carribbean + parts 2 and 3 (2006 and 2007, should be good).

Evil Dead
Evil Dead 2: Dead by Dawn
Evid Dead 3: Army of Darkness
Directed by Sam Raimi, before Spiderman. 1 was pretty scarry when I was a kid, though the effects are 20 years old. 2 was more of a remake, but very funny in parts. 3 had the biggest budget, but I don't remember it too well.
I'll probably regret posting this.

Not my favorites (which would be the Star Wars, Matrix and LOTR sets), but the Jack Ryan collection (Hunt for Red October, Patriot Games, Clear & Present Danger - The 4th with Ben Affleck is questionable) has been M.I.A. so far. Thought I'd drop it in for good measure.
Oh, and then there is always the Blade trilogy if not already mentioned.
