Only problem is that it gets relocked whenever you update it.

Yeah, that is true. The 3.0 update is supposed to hit in June, so it may just be worth it to wait for the release (and imminent jailbreak) before taking the time to play around.
On the non-jailbreak side of things, I find myself using Tweetie and Skype more than I thought I would. Both are great.

For the video people. I've been using Video Monkey to shrink vids to fit on the iPhone. Yes, the PQ is lower quality but I can fit 2 hr movies in to a file size just under 200MB. That allows me to put a lot of movies onto 16GB of space. W/ the small iphone screen size, it's a compromise I can live with.
Unfortunately, it's Mac only. I'm sure there's other ones on the PC but this has a cool feature I like. A slider that you adjust, showing you output file size. Then you can encode as you like. There is a Windows freeware out there called HandBrake that does a great job with video (I have a 16GB Touch 2G). There is another thing called KeepVid that works as a Firefox add-on. Find video you like, say on YouTube. Copy the url & drop it into KeepVid and you end up with a converted video to add to iTunes to load onto yout iPhone/Touch. So far, I have 12 Celtic Woman vids from YouTube and they are wonderful.
