Paul, as I replied before, the back surrounds should surround from the back and if you're sitting up against the back wall, you really can't get much of that effect. Concepts such as ceiling mount or on the floor firing up at the ceiling are valid, but are of limited effectiveness; the ceiling isn't the same as the back wall.
In your situation, going with two QS8s on the back wall about 3' above ear level and widely separated almost to where the side walls should be would seem to be a good 5.1 setup. You of course could try the existing ceiling speakers for 7.1 to see if you like the effect.
