I'm pretty sure I'm not breaking any NDAs by saying that I used to work for a secret shopping company that was employed by Hooters. No, I never went to one, but I did edit the evaluations. Hooters required several things: no mentions of the looks of the waitress (although they did have a question about whether she looked "all-american" whatever the heck that means), no mention of male staff, and of course, they had a list of items you had to order. The most hilarious thing was that our shoppers were (unsurprisingly) mostly elderly ladies. I'm sure they stood out like a sore thumb in Hooters, but it sounds like the stores didn't exactly go out of their way to get good evals, either.
