Two things I suggest you try

1. Change to a new optical cable.
2. During playback on the PS3. Press the "option" button on your remote. It'll bring up the on screen display. Look for the volume control (this is different from the XMB). You may have somehow set the playback volume too high. I like to keep it in the middle. When you boost the volume on the PS3 it will introduce static/noise at higher listening volume. Sort of like OVER amping you signal.
3. I have the 1987 release of the Beatles cd. They sound awful with lots of static, etc. When I got the new 2009 REMASTERED set there was a huge inprovement in audio quality. No static noise at all. Maybe the cd recordings you have just lack the noise filtering that should have been applied in the original recordings.
