If you have S-video on your TV, you do not have to hook up the cable to the TV at all. Many VCR's actually have better tuners that televisions do. Hook up the cable to your VCR, the RCA left and right out from your VCR to your receiver, and the S-Vid from your VCR to your TV. Keep the TV on "Line In" and all you have to do is turn it on and off. Change the channels on the VCR.
Correct me if I am wrong, but there is no difference between a HI-FI VCR and a Stereo VCR as far as the tuner goes.
