But, I happen to know a bit about the history of bread and it wasn't always this soft stuff that we've seen arise in the latter half of the 20th century. The demand for the kind of bread I like and served in good restaurants has diminished during our century. This is a fact. Did I say people are stupid or "gullible" for demanding subway bread? No, I did not. Did I say breadmakers or subway prey on people? I don't think so.
