Randy, the thicker cable varies in two respects: heavier shielding against interference and 75 ohm impedance. For analog audio signals traveling a few feet impedance isn't of any significance and the thin cables aren't designed to meet any tight spec, although they tend to run around 40-50 ohms. As for the shielding, the thin cables have enough for typical home environments if just basic precautions, such as not running them alongside power cords for a considerable distance, are taken.
