not sure if you were asking as a joke, or if you were serious.. havelina is like a wild boar/pig. akin to like the 'razorbacks' in arkansas.. texas havelinas are VERY aggressive, and can get up to around 200 pounds. they have large 'tusks' portruding from their mouths that can cause serious damage. there is no actual 'season' for havelina, they are considered a 'pest' animal(like rabbits and skunks), and can be shot any time of the year. they obviously taste most like pork, but it is very lean pork. has a tendency to be very dry if cooked badly. the havelina that i had in the burrito, was ground with peppercorns and cylantro leaves. it was plenty spicy, and moist..
