For a nice genre mix and excellent audio, consider these:
Alison Krause + Union Station Live (exceptional)
Diana Krall Live in Paris
Faith Hill: When the Lights Go Down
Fleetwood Mac:The Dance
James Taylor: LIVE at the Beacon Theater (exceptional)
Norah Jones: Live in New Orleans (wow)
Santana: Supernatural Live
Yes: Symphonic Live (exceptional)
Roy Orbison Black & White Night (great).
Doobie Brothers Live at Wolf Trap (knocked my socks off)
Sting:All This Time (well done, very emotional; performed at his villa the day after 9/11)

I also concur with your choice of the Bee Gees and the Erc Clapton/Hyde Park - both terrific.

I don't know where you live but here's a suggestion. If you are in a city with a robust library system, check and see what they have from this list. You should be able to find a good number of them. Let's you audition before you buy.

Good luck with it.
