Everything is a compromise it seems unless you can swing a dedicated space. With a 5.1 the surrounds should be to your left and right and slightly ahead of the seating position. For my ears I have found that I like the 8's close to the ceiling but you have high ceiling so it may take some trial and error. I would suggest find a way to set them up temporarily at different heights until you find the sweet spot. I found myself that having them too low that I could pinpoint their location too easily. It really sux when you screw those anchors in and then decide to move your mounts the holes are ugly. Keep us posted on your progress.
Oh and I really like the stand in the second picture , where did you get it if you don't mind my asking.
