According to the people at BB, I would buy a wall mount that spans 2 studs, then mount the TV so that it's offset with this and centered with the wall.

I know that sounds reasonable, but I'd prefer something straight on and not mounted 18 inches to the left of center.

I'd feel more comfortable just ripping out the backside of the wall in the closet and installing more wood, than I would messing around with steel plates. There may be somewhere in Kansas City that will do that, but I don't know of anywhere.
